Amounts of whey and their use in Germany

Abstract

In 1998 the quantity of whey from cheese production amounted to about 12 mio. t. Sweet whey has a portion of 68 %, sourish whey 24 % and 8 % is imported. The production volume of whey products such as whey protein, whey lactose and whey powder are given and discussed.

  Zusammenfassung

Im Jahre 1998 betrug das Molkeaufkommen nahezu 12 Mio. t, wovon der Anteil an Süßmolke 68 % und der Anteil an Sauermolke 24 % betrugen. Der Anteil an importierter Molke belief sich auf 8 %. Der Umfang der Herstellung von Erzeugnissen aus Molke wie Protein, Laktose oder Molkenpulver wird aufgezeigt und diskutiert.
