Abstract

The use of by-products and unusual feedstuffs in animal nutrition presents the opportunity to produce food of animal origin without aggravating the competition for energy and nutrient sources between man and animal. This contribution will offer an overall view of potential origin, nature and quality (especially nutrient content) as well as possible use of unconventional feedstuffs. Products like cabbage leaves, pressed sauerkraut juice, residues of pasta production are described that were rarely taken into consideration ? at least quantitatively or geographically - although they are already used in animal nutrition locally and/or seasonally. Further by-products arise in industrial production of foodstuffs and semiluxury food that can be useful due to their content of energy (e.g. residues of liquorice production), essential nutrients (e.g. yeast culture solution - amino acids, minerals), micro nutrients or ingredients that can be used for dietetic purpose (carrot/tomato pomace - pectin).

  Zusammenfassung

Der Einsatz von Nebenprodukten und unkonventionellen Futtermitteln in der Fütterung landwirtschaftlicher Nutztiere bietet nicht nur in Europa, sondern auch weltweit die Möglichkeit zur Produktion von Lebensmitteln tierischer Herkunft ohne Verschärfung der Nahrungskonkurrenz von Mensch und Tier (Energie-/Nährstoffträger). Im vorliegenden Beitrag wird ein Überblick zu Herkunft (Anfall), Art und Qualität (insbesondere Nährstoffgehalte) sowie zu Einsatzmöglichkeiten (Tierarten, Nutzungsgruppen) eher ausgefallener Nebenprodukte gegeben. Dazu zählen Produkte, die bislang - zumindest mengenmäßig bzw. geographisch - noch keine besondere Bedeutung als Futtermittel erlangt haben, obwohl sie regional/saisonal mit Erfolg zu Fütterungszwecken eingesetzt wurden (z. B. Kohlblätter, Sauerkrautpresssaft, Reste der Nudelproduktion). Bei der industriellen bzw. großtechnischen Produktion von Lebens- und Genussmitteln fallen auch Stoffe an, die als Energielieferanten (z. B. Reste der Lakritzbonbonherstellung) und/oder als Quelle einzelner essentieller Nährstoffe (Hefe-Nährlösung ? Aminosäuren, Mineralstoffe), als Quelle von oder diätetisch wirksamer Substanzen (Karotten- / Tomatentrester - Pektin) für die Fütterung interessant sein können.
